The methods you described may give you an indication on whether or not the piece contains gold but they are not fool proof. The best thing you can do is invest in a testing kit. The kit will contain testing solution for all the variations of gold, silver and platinum. Also included should be a testing stone. (It is advised that you never apply solution directly to a piece of jewelry as it can damage it).
Gold is rarely ever pure, it is mixed with other alloys to make it strong/wearable, so the color you're seeing on the inside from cutting the piece doesn't have much relevance. I hope this helps.
